大米 300克
提前泡水4個小時
中筋麵粉 75克 (米的1/4)
水 225克 (米+麵粉的0.6)
糖 70克(微甜)
酵母粉 4克
蔓越莓乾 少許
1.米漿發酵至2倍大(1.5小時)攪勻排氣裝入模具
2.第二次發酵20分鐘後鋪上蔓越莓乾
3.外鍋2杯水(360克)電鍋跳起就好了,或是用爐火、水滾後大火蒸15分鐘
4、表面抹一點油防乾
300g rice
Soak in water for 4 hours
75g all-purpose flour (1/4 of the rice)
225g water (rice + 0.6 of the flour)
70g sugar (slightly sweetened)
4g yeast powder
A pinch of dried cranberries
1. Let the rice batter rise until doubled in volume (1.5 hours). Stir well to release the air and pour into the pan.
2. Let it rise for a second time, 20 minutes, then top with the dried cranberries.
3. Add 2 cups of water (360g) to the outer pot. (The rice batter should be ready when it starts to boil, or steam on high heat for 15 minutes.)
4. Lightly oil the surface.
