KetoGinja Meatball Stroganoff
Here's What You'll Need:
2 lbs. ground beef
2 eggs
1/2 cup almond flour
4 tbsp. parmesan cheese 2 tsp. salt
1/2 tsp. pepper
1 tsp. garlic powder 2 tsp. parsley 2 tsp. Worcestershire sauce
In a large bowl combine:
• Ground beef
• 2eggs
• 1/2 cup almond flour
• 4 tbsp. parmesan cheese • 2 tsp. salt
• 1/2 tsp. black pepper
• 1 tsp. garlic or onion powder • 2 tsp. dried parsley
• 2 tsp. Worcestershire sauce
4 tbsp. butter for frying meatballs
2 tbsp. butter
2 cup diced onion
6 cloves garlic minced 3 cups broth 1.5 cup sour cream
2 tbsp. cream cheese Salt & pepper to taste
Stir very well, use your hands if you can Once mixed form meatballs 1 inch-ish Add 1 tbsp. butter and 1 tbsp. Olive Oil to hot pan
Add meatballs - do not crowd pan
Cook 5 min on each side
Set aside cooked meatballs on a paper towel lined plate you may need to cook additional batches at this point

For your sauce:
To meatball drippings add onion, cook 3-5 min turn heat down to low/med
Add garlic and stir
Add cream cheese, butter, sour cream
Whisk together until married
Keep whisking to combine fats/ prevent burning turn to very low heat add small amount of broth, whisk
Add Worcestershire sauce, whisk
Add broth, whisk
Add Worcestershire sauce, whisk
This process keeps the sauce creamier - if you go too fast it can get too liquidy
Turn heat up very slightly to simmer sauce - once bubbly, add meatballs, and turn heat back on low
Simmer 10-15 min
Sauce may separate as it cools, but once it's reheated it will combine
