Welcome to the first episode of my cosy Scottish cottage hosting series, and it’s off to a chaotic start. I planned the perfect day for a friend’s birthday, but when I arrived at the local island supermarket… disaster struck. The shelves were empty. No veg. No pastry. No pie for dinner.
Watch as I scramble to save the evening I had planned, improvise meals, and turn a hosting nightmare into a heartwarming Highland experience.
Mac and cheese recipe:
Melt 50g butter
Add 2 heaped tablespoons plan flour
Mix
Gradually add 550ml milk
Add 1 tsp mustard
1tsp paprika
Whisk regularly and gradually add cheese
1 block extra mature cheese
Parboil macaroni pasta
Bake at 200c at 30mins/until top is golden and crispy
