🛒 INGREDIENTS
*(for a 8 inch springform pan)*:
✅ For the Cake:
▪️ 300g grated pumpkin
▪️ 2 large eggs, at room temperature
▪️ 120g granulated sugar
▪️ 8g vanilla sugar (or 1 tsp vanilla extract)
▪️ A pinch of salt
▪️ 250g all-purpose flour, plus more if needed
▪️ 10g (2 tsp) baking powder
▪️ 80ml neutral vegetable oil (e.g., sunflower, canola)
▪️ 1 lemon, for zest and juice
▪️ 100g raisins (optional)
✅ For the Lemon Glaze:
▪️ 100g powdered sugar, sifted
▪️ 1 tablespoon fresh lemon juice
📝INSTRUCTIONS:
1️⃣ Prepare Oven & Pan: Preheat oven to 180°C (350°F). Grease an 8-inch springform pan and line the bottom with parchment paper.
2️⃣ Prepare Pumpkin: Peel and deseed the pumpkin. Grate 300g of flesh using a coarse grater. Set aside.
3️⃣ Make Batter: Beat eggs, sugar, vanilla sugar, and salt with a mixer for 3-4 mins until pale and fluffy. Mix in the vegetable oil, lemon zest and lemon juice on low speed. Fold in the grated pumpkin (and raisins, if using).
4️⃣ Add Dry Ingredients: Sift in the flour and baking powder. Fold The batter should be thick but pourable.gently with a spatula until just combined.
5️⃣ Bake: Pour the batter into the prepared pan and smooth the top. Bake for 35-45 mins, until golden and a toothpick comes out clean.
6️⃣ Cool: Let cool in the pan for 15-20 mins, then release the springform and cool completely on a rack.
7️⃣ Glaze: Mix sifted powdered sugar with 1 tbsp lemon juice until smooth. Drizzle over the cooled cake. Let set before slicing.
