Parthasarathy Temple Puliyodarai
Ingredients
For the Rice:
• 2 cups cooked rice (1 cup = 250ml)
• 1 large lemon-sized ball of tamarind
• 2 tablespoons pepper powder
. 1/2 teaspoon roasted fenugreek powder
• 1½ teaspoons salt
• ¼ teaspoon turmeric powder
• 1 sprig fresh curry leaves
Tempering:
• 2 tablespoons sesame oil
• 1 teaspoon mustard seeds
• ¼ teaspoon asafoetida (hing)
Second Tempering:
• 2 tablespoons sesame oil
• 1 tablespoon split Bengal gram (channa dal)
• 2 teaspoons urad dal
• 2 tablespoons cashews
Instructions
1. Prepare Tamarind Extract
Soak the tamarind in warm water for 10 minutes. Squeeze and extract the thick juice, then set aside.
2. Cook Tamarind Mixture (First Tempering)
Heat 2 tablespoons sesame oil in a pan. Add mustard seeds and let them splutter. Add cumin seeds and allow them to splutter as well.
Next, add fenugreek seeds and asafoetida, frying for a few seconds until fragrant.
Pour in the tamarind juice and bring to a boil. Let it simmer until the juice reduces and thickens.
Add salt, mix well, then switch off the flame. Set this cooked tamarind mixture aside.
3. Second Tempering
In the same pan, heat 2 tablespoons oil. Add Bengal gram and urad dal, frying until they turn light golden brown.
Add cashews and fry until they become light brown.
Now add the prepared tamarind mixture to this tempering. Cook for 2 minutes, then add turmeric powder and stir well. Switch off the flame. Your Puliyodarai mixture is now ready.
4. Mix with Rice
Spread the cooked rice in a large mixing bowl. Sprinkle pepper and roasted fenugreek powders over it and gently mix without breaking the rice grains.
Add the prepared tamarind mixture and fold it in gently until evenly combined.
5. Garnish
Tear the curry leaves by hand and scatter them over the rice. Give it a final gentle mix.
