🍇 recipes:
chickpea salad sandwich
chickpea salad (for 2 sandwiches): 1 can chickpeas, 1/2 red onion (finely diced), 1-2 pickles (finely diced), small handful fresh dill (finely chopped), 1 tbsp plant-based yogurt, 1 tbsp tahini, juice from 1/2 lemon, salt and pepper to taste
other fillings: mustard, tomato, lettuce, sprouts
tofu and broccoli bowl
lettuce, parsley, cucumber, sprouts, scallion greens
1 block of tofu (diced), 1/4 head broccoli (cut into florets), scallion whites, garlic - all sautéed in olive oil until crispy
1-2 tbsp soy sauce, grated ginger, black pepper
cooked quinoa
tahini sauce: 1 tbsp tahini, 1 tsp syrup, pinch of salt, water to thin
juice from 1/2 lemon
loaded polenta
1/3 cup polenta, good pinch of herb salt, 1 cup water (may need more) - use a whisk to remove any lumps
1 can chickpeas, pinch of salt, 1 tsp sesame seeds - fried in olive oil until crispy
1/3 cucumber, handful radishes, 1/4 large red onion - thinly sliced, tossed with fresh mint and parsley, coated in olive oil, lemon juice, salt and pepper
one-pot zucchini rice
1 onion, 2 cloves of garlic, 2 small zucchinis - sautéed in olive oil until lightly browned
Salt & pepper to taste
1 tsp curry paste, 1-2 tbsp tomato paste
1/3 cup brown lentils (soaked), 1/3 cup short-grain rice (soaked)
1 cup /250ml) water
fresh spinach - added after cooking
pumpkin seeds, fresh parsley and lemon juice for serving
peanut rice noodle bowl
rice/glass noodles
carrot and cucumber, cut into matchsticks
peanut sauce: 1 big tbsp peanut butter, 1/2 tsp miso paste, 1 tbsp soy sauce, black pepper, grated ginger, water to thin
edamame
pickled red onions
fresh parsley
chopped peanuts
