Viral Gajar Ke Jamun in Rabdi | Winter Special Dessert Recipe
Hello friends!
Welcome back to my channel.
Today I’m sharing a very viral and unique dessert recipe – Gajar Ke Jamun in Rabdi.
This recipe is very easy, very tasty, and perfect for winters.
So let’s start without wasting time.
Ingredients for Gajar Jamun
7–8 medium carrots
2 tablespoons ghee
A pinch of cardamom powder
A pinch of kesar (saffron) food color
1 cup sugar
1 cup suji (semolina / rava)
1½ cups milk
Ingredients for Rabdi
1 litre full-fat milk
250 grams mawa (khoya)
Sugar to taste
1 teaspoon cardamom powder
Chopped dry fruits (almonds, pistachios, cashews)
Method
Step 1: Prepare Carrot Mixture
First, wash, peel, and chop 7–8 carrots.
Put them into a mixer jar and grind to a fine paste.
Now heat a pan and add 2 tablespoons ghee.
Add the carrot paste and roast it well on medium flame.
Keep stirring until the raw smell disappears and a nice aroma comes.
Now add:
A pinch of cardamom powder
A pinch of kesar food color
Mix well.
Step 2: Make the Dough
Add 1 cup sugar and mix properly.
Then add 1 cup suji (rava) and mix again.
Now pour 1½ cups milk gradually and mix continuously.
Cook it like dough until it becomes thick and leaves the pan.
Turn off the flame and let the mixture cool down completely.
Step 3: Prepare Rabdi
Now take another kadai and add 1 litre full-fat milk.
Cook it on medium flame.
Add 250 grams mawa, sugar as per taste, and half teaspoon cardamom powder.
Cook for 25–30 minutes, stirring in between, until thick rabdi is ready.
Switch off the flame and let it cool slightly.
Step 4: Shape the Jamuns
Take the cooled carrot mixture and make small round balls like jamuns.
Gently add these carrot jamuns into the prepared milk-mawa rabdi.
Step 5: Garnishing & Serving
Garnish with chopped dry fruits on top.
Serve chilled for best taste.
Serving Suggestion
This dessert tastes amazing when served cold.
