Melt in your Mouth Shortbread Cookies
1 1/2 cups butter - at room temperature, salted
3/4 cup icing sugar
2 1/4 cup gluten free flour (all purpose flour can also be used for non gf)
3/4 cup cornstarch
1 teaspoon vanilla extract
In a large bowl beat butter with hand mixer for at least one minute. Add icing sugar and beat another one to two minutes. Add cornstarch and beat another one to two minutes. Add half the flour, beat again until while combined. Add remaining flour and beat until well combined and fluffy.
Drop on a baking sheet by teaspoonful. Bake at 350° for 15 minutes. Bottom of cookies should only have slight golden color. Let cookies rest 10 minutes on baking sheet as they will fall apart very easily at this stage. Use a spatula to gently transfer to a cooling rack or plate.
Optional: Before baking, you could add dried cherries, nuts, sprinkles or jam to the middle of each cookie. Another option is to drizzle dark or milk chocolate over each cookie once cooled or sprinkle icing sugar for a touch of extra sweetness.
Note: If your kitchen is pretty warm and/or humid, cool cookies in fridge before baking.
