Cozy Rainy Day Cooking | Noodle Soup, Healthy Biscuits, Meal Prep

Today I'm spending a rainy day cooking yummy warming recipes! I make noodle soup in the instant pot and healthy oil free/ butter free biscuits!
I also make a super quick and easy meal prep baked coconut curry.

Golden noodle soup
(slightly different directions than video with inclusion of red lentils)
1 onion diced
3 carrots diced
3 celery stalks diced
8 oz mushrooms- best is shredded king oyster mushrooms but I used shiitake in video
1/2 cup red lentils
1 can chickpeas
6 cups veggie broth- homemade is best
1 tsp ground turmeric
2 tsp ground ginger
2 tsp poultry seasoning
1 or 2 tbsp Bragg’s liquid aminos
1 cups whole wheat rotini
2 or 3 cups chopped kale or other greens
squeeze of lemon and olive oil for drizzling at the end
add all ingredients besides noodles to instant pot. pressure cook for 5 minutes. let pressure release naturally for 15 minutes, then release the rest manually. Add in noodles and press “saute” button to bring instant pot back up to a simmer. boil noodles until cooked- about 8 minutes.
if not using red lentils- add everything including noodles to instant pot and pressure cook for 1 minute, quick release
