Just a quick look at how I z-spin (clockwise) singles and then s-spin (counter clockwise) a 3-ply on-the-fly on my drop spindle. The trick for me is to lock the hanging loop in the half hitch before single additional singles. Then stop, open the loop, pull three (like a crochet chain) and reverse the twist for the ply, reset the anchors on the spindle, and continue spinning more.
