Pasta Sauce Recipe
2 bellpeppers
1 onion
28 oz crushed tomatoes
4 garlic cloves
2 tbsp italian seasoning
1 cup pumpkin puree or sweet potato (no skin)
4 cups chopped cauliflower or zucchini
4 cups diced carrots
Salt pepper to taste
Optional
In a large pot cook down vegetables for 10min. If using frozen add frozen vegetables 10 min after cooking down raw vegetables. Add in seasonings, add can crushed tomatoes, add pumpkin puree. Puree sauce using immersion blender or standing blender. Enjoy
