Vegan Spinach Cheese Ravioli Ingredients:
Ingredients For The dough:
2 Cups All Purpose Flour(Maida)
4 Tablespoons Vegetable Oil
Salt to Taste
Water to form Semi-Soft Dough
Ingredients for the Filing:
1 Cup Boiled Spinach
1 Cup Vegan Almond Cheese
3 Cloves Of Chopped Garlic
2 Tablespoons of Vegan Butter
1 Tablespoon Of Oregano
½ Tablespoon Of Chilli Flakes
Salt to Taste
Pepper to Taste
Ingredients for the pink Sauce:
3 Tablespoons Vegan Butter
4 Tablespoons All Purpose Flour(Maida)
1 ½ Cups Almond Milk
3 Tablespoons Marinara Sauce/Pasta Sauce
Salt to Taste
Pepper to Taste
1 Tablespoon Oregano
2 Tablespoons Nutritional Yeast
1 Teaspoon Chilli Flakes
2 Tablespoons Sundried Tomatoes
1 Tablespoon Olives
Pinch Of Nutmeg Powder
Vegan Spinach Cheese Ravioli Instructions:
To make dough, in a big bowl, combine 2 cups of all-purpose flour, salt to taste, 4 tablespoons vegetable oil and water to form semi-soft dough. Let the dough rest for ½ an hour. The dough should not be too wet or too sticky.
Boil 1 cup of spinach and blanch it.
For the filling, take a bowl and mix in 1 cup boiled spinach, 1 cup almond cheese, 3 cloves of chopped garlic, 2 tablespoons of vegan butter, 1 tablespoon of oregano, 1/2 tablespoon chilli flakes, salt and pepper to taste. Mix everything well.
Divide the dough into equal portions on a floured surface. Roll the dough very thin or ravioli will be too solid when cooked. Once you have rolled the dough approx. ½ inch in thickness, cut the rolled dough with the round cutter.
Leaving a half inch border around the edges, place the filling on the sheet. Apply water around the edges. Fold from one side making a half moon shape. Pinch the edges together and then seal the edges of ravioli with a fork.
When done shaping the ravioli, in a heavy bottom pot, pour 3 cups of water and salt to taste. Bring it to a boil. Place the ravioli in boiling water for 3-5 minutes or until they float. Drain the ravioli from the water and keep aside in a plate.
Heat 3 tablespoons of vegan butter in a pan, and then stir in 4 tablespoons of all purpose flour and cook for 1-2 minutes. Pour 1 ½ cups of almond milk, gradually stir in the almond milk to get a smooth sauce. Keep in mind that no lumps are formed.
Add 3 tablespoons of marinara/pasta sauce, salt and pepper to taste, 1 tablespoon oregano, 2 tablespoons nutritional yeast, 1 teaspoon chilli flakes, pinch of nutmeg powder, 2 tablespoons of sundried tomatoes and 1 tablespoon olives.
Mix them well and add in ravioli to the sauce, cover the raviolis with the sauce and cook for a minute.
Your hot and yummy ravioli is ready to eat.
Serve hot. Can be eaten for dinner
