How do we KNOW what Latin & Greek sounded like?

We have a very clear idea of what Latin and Ancient Greek sounded like thousands of years ago, and we don't need a tape recorder or a time machine to know for certain, just as we don't need video recordings of Julius Caesar to know that he existed or of his exploits. The living Romance languages, ancient grammarians, transcriptions and borrowings, spelling mistakes, and linguistic science allow us to understand all about the pronunciation of Latin and Ancient Greek.
