SPICY SESAME PASTE NOODLES - 1 serving

1/2 TBSP Sesame Paste
1 TBSP Smooth Peanut Butter
1 TBSP Light Soy Sauce
1-2 TSP Rice Vinegar
1 TBSP Lard or Oil
1 TSP Sugar - adjust depending on how salty your braised meat liquid is.
1/3 Cup Braised Meat Sauce or Water - this recipe from woksoflife is great https://bit.ly/3iiqNrb
1 Scallion (chopped)
2-3 TBSP Chili Oil - you can make your own or use the delicious Lao Gan Ma
4 oz Fresh Wheat Noodles

Instructions:
Mix together sesame paste, peanut butter, light soy sauce, rice vinegar, lard, sugar, and braised meat liquid until well-combined and smooth.
Taste and adjust to your liking!
Cook the noodles according to package instructions. Drain and set aside.
Roughly chop one scallion - green part only.
Scoop 2-3 TBSP of chili oil onto a plate.
Plate noodles then a big ladle of the sesame sauce.
Top with chopped scallions.
