Bread Recipe:
4T active dry yeast
2T sugar
1t salt
1/4 cup melted butter
1-1/4c warm water
3-1/2 - 4 c AP unbleached flour
Put water, yeast, & sugar in a small bowl and stir together. Let it sit to activate the yeast until bubby (not necessary if using Rapid Rise Yeast). Add the salt to one cup of flour and mix well in a mixer bowl. add the yeast and butter and begin to mix by stirring with a spoon. Continue to add the flour 1/2c at a time until you have at least 3-1/2 cups of flour added in. More can be mixed or kneaded in if needed.Turn the dough out onto a flour surface to knead until the dough springs back when depressed slightly by your finger. Form the dough into a ball, place it in the bowl, and cover to let it rise until doubled- 5-10 minutes. This dough rises very quickly. It will only take a few minutes for the dough to double in size. Form loaf or rolls. pre-heat oven to 375°F. Let the dough rise until doubled. if making a loaf, cut a slit in the top of the dough. Bake 20-30 minutes or until golden on top. Rolls will require less time. Cool the loaf completely before cutting.
