This easy bacon wrapped chicken recipe is fast and delicious! The chicken is seasoned with Maple syrup, red wine vinegar and spices, stuffed with cheese and wrapped in bacon. Can't get better than that! The chicken is very moist with lots of gooey cheese and the bacon on the outside is crispy! Oh so Good!

Recipe:
Bacon Wrapped Chicken
2 tsp paprika
1 tsp dried thyme
1 tsp garlic powder
1 tsp kosher salt
1/2 tsp pepper
4-5 medium chicken breasts, flattened
8-10 slices of bacon
2 tbsp pure maple syrup
1 tbsp red wine vinegar
mozzarella cheese for stuffing
Preheat oven to 425 degrees. Grease a 9x13 inch baking dish. In a small bowl, stir together the paprika, thyme, garlic powder, 1 tsp kosher salt and black pepper.
Pat the chicken dry. Sprinkle the chicken evenly on both sides with thyme mixture, rubbing to coat. Cut mozzarella into strips and put as much cheese as you want into the center of the chicken. Roll each chicken piece up. Grab bacon and wrap around the outside the the chicken breast. Lay seam-side down into the prepared baking dish. to the same bowl you used for the seasonings, add the maple syrup and vinegar, and stir to combine.
Brush the tops of the chicken with the maple syrup mixture. If desired, crack black pepper over top.
Bake the bacon wrapped chicken for 20-25 minutes. To be sure use a thermometer inserted at the thickest part registers 165 degrees F. Brush the drippings over the chicken at the halfway point. If you'd like to crisp the top of the bacon, switch the oven to broil. Broil the chicken for 1-3 minutes. When chicken is done. Let rest at least 5 minutes to allow the juices to reincorporate into the chicken. Enjoy!
