Cinnamon Roll Cookie Recipe
2 3/4 cups all-purpose flour
1 tsp. baking powder
1/2 tsp. salt
1 c. unsalted butter, softened
1 c. granulated sugar
1 large egg
2 tsp. vanilla extract
1- 2 tablespoons milk (only if dough is dry)
Note: Do not chill dough in freezer for more than 45 minutes. It will be harder to slice and may crumble.
Cinnamon Filling:
3 tablespoons unsalted butter melted
1 tablespoon ground cinnamon
1/2 c. brown sugar
pinch of salt (optional)
Glaze:
2 cups icing sugar
3 tablespoons milk or cream
1 tsp. vanilla
1 tsp. white vinegar or lemon juice
Bake at 350 F for 10 - 12 minutes until edges are set.
After removing from oven let cool on cookie sheet for 5 minutes, then transfer to cooling rack.
For a soft cookie take out of oven at the 10 minute mark, if you prefer a cookie with more crunch take out at 12 minutes.
