It will take a little bit longer for the butter and eggs to get to "room temp" today as it's currently -25F outside and a -49F windchill and my house is cold! Of course I have the heat cranked, but in an older house with only baseboard electric heat, they struggle to keep up and therefore it's a bit chilly in here. Happy baking!!
1 cup room temperature water
1 cup lukewarm milk
1 tablespoon yeast
1/4 cup sugar (divided)
4 tablespoons very soft butter
2 teaspoons salt
1 egg
4 cups flour (+/-)
In a large mixing bowl add the water, warm whole milk (lukewarm, not over 105F), yeast and 1 tablespoon of the sugar. Mix well and allow the yeast to proof for 10 minutes.
Add in the remaining sugar (3 tablespoons) and remaining ingredients. Knead with a mixer attached with a dough hook for 8-10 minutes. If dough is too sticky, add a tablespoon at a time until it comes together to form a ball and comes off the dough hook easily.
Place dough into a greased bowl.
Cover and let rest 1 hour or until doubled.
Punch down dough and turn out onto a lightly floured surface. Shape into a loaf that is as wide as your loaf pan. Cover and let rest 30 minutes.
Preheat oven to 350F. Lightly brush with melted butter. Bake at 350F for 25-30 minutes or until golden brown. Remove from pan and allow to cool before slicing. Enjoy!
