Pommes Frites, meet Croque Madame. A new take on two classics that's oddly familiar.
Ingredients:
Mornay Sauce:
4oz butter
1/2 cup flour
1 1/4 cups milk (Adjust to desired thickness)
6oz white cheddar or gruyere (grated or cut)
salt to taste
3-4 medium Yukon gold potatoes
1 whole egg
2 tbsp chives, sliced
2 tbsp chopped rosemary and thyme
salt and black pepper
