I've decided to end this loquat series and use the dirt and space for a new series. The endosperm stays there in the dirt for ages like two halves of a peanut, while the seed coat slowly breaks down. The endocarp, the woody covering on the outside, was the only part of the seed to break down.
I probably underwatered in the last 2 or 3 months but the real issue was the roots had already permeated the entire soil mass at the bottom. A transplant would have done wonders despite the colder late fall/winter temperatures.
