Garlic Shev | Diwali Snack | Savory Diwali Snack | Garlic Sev For Diwali | Shev | Sev | Easy Shev Diwali Special
4 cups chickpea flour
1 cup rice flour
5-6 tbsp garlic powder
2 tsp turmeric
Salt as per taste
2 tsp red chili powder (optional) I didn't add as we like it this way
1 cup water
Few drops of oil to coat on top
Oil for deep frying
Mix all the dry ingredients and break any lumps for a smooth dough.
Keep adding water in batches and kneading until you get a nice semi soft dough.
You may need more water or less depending on the flour quality.
Once it kneaded, apply a few drops of oil evenly all over, cover, and set it aside to rest for 20 minutes.
Heat the oil on medium flame and check if it's the right temperature by placing a wooden spoon in the hot oil. If it bubbles then it's ready.
Grease the sev mold from inside and fill it with the prepared dough to the top.
Close and drop the dough in a circular motion into the hot oil to make a round.
Make the desired size.
Fry one side completely on medium heat and turn just once to fry the other side to a golden color.
Drain and cool at room temperature, then store in an airtight container for more than 2 weeks.
Makes about 12-14 sev rounds depending on the size you make.
