This is an easy and creamy Rice Kheer recipe made with a rice-nut paste. It cooks quickly, doesn’t stick to the pan, and tastes absolutely delicious. Perfect for festivals, guests, or a quick dessert craving.

• Rice – 3 to 4 tbsp, soaked 15 mins
• Almonds – 4, soaked 15 mins
• Cashews – 4, soaked 15 mins
• Full-fat milk – 1 litre
• Sugar – 1 cup (adjust to taste)
• Ghee – 2 tbsp
• Cardamom powder – ½ tsp
• Saffron – a few strands soaked in 2 tbsp warm milk (optional)

🍲 Step-by-Step Method
1. Soak & Prepare Paste
• Soak rice, almonds, and cashews for 15 minutes.
• Wash, rinse, and grind into a smooth paste.
2. Boil Milk
• In a heavy pan, add 2 tbsp water (to prevent burning).
• Add 1 litre milk and bring to a boil.
3. Add Rice-Nut Paste
• Slowly stir in the rice-almond-cashew paste.
• Keep stirring continuously to avoid lumps.
4. Thicken the Kheer
• Cook for 5 minutes until the mixture thickens.
5. Sweeten & Flavor
• Add 1 cup sugar, 2 tbsp ghee, and ½ tsp cardamom powder.
• Mix well and simmer for 3 minutes.
6. Finish with Saffron (Optional)
• Add saffron soaked in warm milk for extra flavor and rich color.
7. Serve
• Your creamy Rice Kheer is ready!
• Serve hot, warm, or chilled.
