Buying and decorating our Christmas tree, A trip to central Oslo's Christmas market, cooking salmon soup from Finland.

Lohikeitto, Salmon soup
500- 600 g salmon
2-3 table spoons of butter
1 leek
3 carrots
500 g potatoes
2 bay leaves
2 fish stock cubes
1 liter of water (Reduce if you want a thicker soup)
A handful of dill (chopped)
3 deciliter of heavy cream
Salt and pepper to taste
Melt the butter, add the chopped leek. Fry for a few minutes.
Add the carrots and potatoes. (Chopped into cubes) Add the bay leaves and fish stock cubes. Add the water and the chopped dill. (Save some for garnishing).
Bring to a boil under a lid for about ten minutes. (Till the vegetables are almost cooked.
Reduce the heat.
Add the heavy cream. Boil without the lid for a few more minutes.
Remove the casserole from the stove. Add salmon (cut into cubes). They will cook in the warm soup. Ready to serve after about 5-6 minutes.
Serve with a bit of dill, a squeeze of lemon and some bread. 😄
