In this video I made pineapple salsa. You can serve it fresh or can for later. Great alternative to tomato based salsas. Very tropical vibe.
Ingredients-
1 diced pineapple
1/2 diced red onion
3 diced jalapenos
4 to 5 diced sweet peppers/bell peppers
heaping TBSP finely chopped fresh cilantro
2 diced green onions
1/2 cup of white vinegar
2 TBSP lime juice
Season to taste with-
salt
pepper
cumin
smoked paprika
garlic powder
red pepper flakes
chili powder
Allow a 1/2 inch head space and waterbath for 10-15 mins.
