How to make Peppermint Biscotti | Peppermint Biscotti Recipe

Wonderful accompaniment to coffee or cocoa! This flavorful biscotti has become a favorite. It freezes wonderfully, and its great for gift giving.
3/4 C butter
3/4 C sugar
3 eggs
2 tsp peppermint extract
3 1/4 C flour
1 tsp baking powder
1/4 tsp salt
1 C crushed peppermint candies (candies or candy canes) (some store have these in the bulk section)
In a large bowl cream butter and sugar. add eggs and extract, mix. Add dry ingredients. Mix well. mix in crushed peppermint. Dough will be thick.
Divide dough in half. place each half on a parchment lined baking sheet to form a log measuring 12-14 inches by 2-3 inches. Bake at 350° for 25-30 minutes. Remove from oven and slide parchment with the log onto a cutting board and slice hot baked dough into 1" strips. Place cut side down on cookie sheets and bake again for 15 minutes or until firm. remove to wire rack and cool. Store in an airtight container, or the freezer. when cool you can dip or drizzle melted chocolate and sprinkle with additional crushed candy.
Dip in cocoa or coffee.
