A mix of chicken and vegetables in a creamy sauce, topped with buttery, flaky puff pastry.
Super easy to prep, you're gonna have to prepare a few extra pie dishes as your family will be left wanting more.
Ingredients 👇
30g butter
600g chicken fillets
1 onion,diced
1 cup mixed vegetables
1 tsp thyme
1 tsp ginger garlic
1 tsp chilli powder
1 tsp cumin powder
1 tsp black pepper
Chopped parsley for garnish
1 beaten egg
Nigella seeds for deco
1 sheet puff pastry
Salt
White Sauce 👇
800ml milk
40g butter
3 tbsp plain flour
1 tsp black pepper
Salt to taste
Ingredients 👇
In a pot, melt butter. Add in the onions and fry till golden on the edges.
Cut chicken fillets into pieces, add into pot, cover, and cook till little moisture is left.
Add ginger and garlic, thyme, mixed vegetable, chilli powder, cumin powder, and salt. Mix in and cook for about a minute and then remove the chicken from the pot and leave aside.
Now, to make the creamy white sauce.
In the same pot, on medium heat, melt butter, add the flour and braise for about 30 seconds then slowly pour in milk bit by bit, stiring at the same time so it doesn't get lumpy. You can use a whisk and gently simmer till the sauce thickens. Sprinkle in black pepper and salt.
If the mixture gets too thick, you can add some more milk.
Add the chicken to the sauce, mix and sprinkle over chopped coriander or parsley.
Pour mixture into ovenproof dish. Cover with readymade pastry sheet, and leave a little extra pastry to hang over the dish as the pastry shrinks whilst baking. Crimp the edges, and if you have any pastry left, you can use it to decorate the top of the pie.
Bake in preheated oven on 180c for 30 minutes, or until the pastry is golden and cooked.
Enjoy with some salad and wedges.
Brush over with egg and sprinkle nigella seeds.
