Incredible White Brigadeiro Recipes to try at Home

As I mentioned before this is a must for Brazilian birthday parties.
Here are the ingredients we will need:
1 sweetened condensed milk
1/2 thick cream or 30ml of table cream
100g of white chocolate sprinkles
Around 25 small baking cups
For the variations we will need:
50g of Nutella
50g of paçoca (Brazilian treat similar to peanut butter)
50g of caramel
50g of white sugar with cinnamon powder
For the nutella and caramel one:
Icing nozzle
Icing sleeve
Here is the recipe:
Put the sweetened condensed milk and the thick cream in a small pot. Turn on the heat in medium and start mixing it.
Don’t stop or you will burn the brigadeiro. Once it starts to bubble or get thicker (in case it doesn’t bubble) put the heat a bit lower and keep mixing it.
To see if it’s ready we have to be able to see the bottom of the pot and also once you turn the spoon with a bit of the brigadeiro it’s not so continuous (liquid) and it separates in the spoon.
So once it’s ready, we will turn of the heat mix a bit more and transfer it to a bowl or a plate.
Let it cool down naturally, it can take 1 to 2h. Don’t rush putting it in the fridge because it can change the consistency.
Separate a container with water, a small spoon and the baking cups. And in a plate separate the sprinkles.
Let’s start with the simpler one: put a bit of the water in your hands, take a bit of the brigadeiro with the spoon and make a little ball.
Place it and roll into the sprinkles to make sure it’s all covered. Then put it in the baking cup and repeat it at least 5 more time.
For the nutella:
We will place the nutella in the icing sleeve with the icing nozzle and reserve it.
Then we will take a bit of the the brigadeiro, roll it, put in the sprinkles. Place it in the baking cup and with the help of a toothpick we will do a hole.
Take the icing sleeve and gently place inside the brigadeiro and press it removing from the brigadeiro like this. Repeat it 5 times.
For the caramel:
We will do the same procedure we did for the nutella one. But we will place the caramel inside the icing sleeve. And once we do the small ball we will place it in the white sugar with cinnamon powder mix. Then put it in the baking cups, open a bit with the toothpick and gently add the caramel. Repeat it at least 5 times.
Now the paçoca one:
We will use what is left from the brigadeiro dough and add one paçoca for this quantity, then take it with the spoon and place it in the plate with the rest of the paçoca. Roll it and put it in the baking cups. Repeat it until you finish the brigadeiro dough.
That’s it, we have nice brigadeiros for a small party that look pretty for a decoration table or for the snacks table.
Once you bite the brigadeiro with nutella or the caramel one you can see that the filing is inside giving it even more taste and making it look fancier.
I love peanut and the paçoca one is perfect for me, with a lot of flavor.
If you want to make more brigadeiros of one of this flavors just remember to add more quantity to the ingredients.
