Ravva Kesari is a popular South Indian dessert made from semolina (ravva/sooji), sugar, ghee, and flavored with cardamom. It’s known for its soft, melt-in-the-mouth texture and vibrant yellow-orange color, typically achieved using saffron or food coloring.
🌼 Ravva Kesari Recipe (Serves 3–4)
📝 Ingredients:
Semolina (Ravva/Sooji) – 1 cup
Sugar – 1.5 cup (adjust to taste)
Water – 2 to 3 cups
Ghee – 3 to 4 tbsp
Cardamom powder – 1/4 tsp
Cashews – 8 to 10
Raisins – 8 to 10
Saffron strands soaked in warm milk
Vanilla Essence - 1/4 tsp
👨🍳 Method:
Roast Semolina
In a dry pan, roast semolina on medium flame until it's aromatic and slightly golden. Keep stirring to avoid burning. Set aside.
Fry Cashews & Raisins
In a separate pan, heat 1 tbsp ghee, fry cashews till golden and raisins till they puff up. Set aside.
Boil Water
In the same pan, add water, bring it to a boil and add cardamom and ghee
Add Semolina
Lower the flame and slowly add roasted semolina, stirring constantly to avoid lumps.
Cook the Mixture
Let it cook on low heat until the water is absorbed and semolina is soft.
Add Sugar
Stir in sugar – the mixture will loosen up a bit. Continue stirring.
Add Ghee & Flavor
Add remaining ghee and mix well along with vanilla essence. Stir until it thickens and starts leaving the sides of the pan.
Garnish
Add fried cashews and raisins. Mix and serve hot or warm.
