Here is our personal take on the honey glazed rack of lamb recipe
Ingredients:
1 x 500g lamb rack
2 red onions
2 tbsp freshly farmed honey
½ tbsp thyme
½ tbsp rosemary
¼ cup vegetable stock
A pinch of salt & pepper
Method:
Start by preheating your oven to 200*C (400*F)
Chop your red onions into thin slices and cook them in a pan on medium heat until soft but not burnt. Place into a pan and season with salt and pepper.
Place your lamb rack on top of the onions, scoring the fatty side with a knife.
In a small saucepan on low heat, add in your freshly farmed honey, thyme & rosemary. Cook until the honey becomes runny, mixing constantly so the honey doesn’t burn.
Add the warm honey to the lamb with a brush, then season with a hefty pinch of salt before placing in the oven for 45 minutes. Adding the vegetable stock halfway through.
Remove from the oven once cooked and allow to rest of 5 minutes before serving with some more freshly farmed honey.
