Ingredients for the Chutney Paste:
Tomatoes: 600 grams [00:45]
Tamarind: A small portion [01:49]
Garlic: 10-12 cloves [02:00]
Salt: 2 tablespoons [02:08]
Whole Coriander: 1 tablespoon [02:12]
Kashmiri Red Chili Powder: 2 tablespoons [02:21]
Steps to Make the Chutney Paste:
Wash and chop the tomatoes into pieces [01:04].
Add the chopped tomatoes and the rest of the ingredients into a grinder jar [01:31].
Blend everything into a fine paste [02:27].
Ingredients for Tempering (Tadka):
Oil: 2 tablespoons [02:54]
Mustard Seeds, Whole Cumin Seeds, Raw Split Chickpeas (chana dal), and Raw Split Black Lentils (urad dal): 1 teaspoon each [03:15]
Garlic: 7-8 cloves [03:41]
Whole Dried Red Chilies: 8-10 [03:51]
Curry leaves: [04:12]
Turmeric: 1/2 teaspoon [04:27]
Jaggery: 2 tablespoons [05:49]
Asafetida (hing): A pinch [06:21]
Vinegar: 1 tablespoon [06:38]
Steps to Cook the Chutney:
Heat oil in a pan [02:49].
Add the mustard seeds, whole cumin seeds, chana dal, urad dal, and let them sizzle [03:22].
Add the garlic, dried red chilies, and curry leaves [03:41].
Add turmeric powder and mix well [04:27].
Pour the blended tomato paste into the pan [04:33].
Cover the pan and cook for 10-12 minutes on low-medium heat [05:09].
Check the chutney to see if it has thickened and the oil has separated [05:19].
Add the jaggery and a pinch of asafetida and mix well [05:45].
Finally, add vinegar and stir to combine [06:38].
The chutney is now ready [07:03].
Let it cool completely before storing in a sterilized jar [07:44].
