INGREDIENTS
3 - 4 tablespoons extra virgin olive oil (or cooking oil of choice)
1 cup yellow onion chopped
2- 3 green onions chopped
1 cup bell peppers chopped
2 - 3 cloves garlic, minced
salt (optional)
1 pound ground turkey
1 teaspoon chili powder (or to taste)
2 tablespoons fresh parsley chopped
INSTRUCTIONS
Heat 2 tablespoons oil in a large pot on medium - high heat.
Add the chopped onions and bell pepper
Cook until onions and peppers are softened, 2 - 3 minutes.
Add the garlic and cook 30 seconds more.
Push the vegetables to the edge of one side of the pot
Position that side of the pan so that it is off the burner, away from the heat.
The empty part of the pan should be right over the burner.
Add 1 - 2 more tablespoons of oil to the empty part of the pot.
Add ground turkey, chop in small chunks
Sprinkle with all purpose seasoning and chili powder.
Allow turkey to cook until the pieces are brown on all sides
Once the turkey is cooked through, stir in the onions and peppers
Adjust taste with more seasoning, black pepper, salt and chili powder to taste.
Turn off heat. Stir in fresh chopped parsley (or green part of chopped green onion)
Allow to simmer while the heat is cooling down
Serve alone, or with garden vegetables, steamed rice or noodles.
