Ingredients
8oz Self-raising flour
8oz Butter/Margarine
8oz Sugar
4 Eggs
1 ½ Baking powder
300ml Double cream
2tbsp Caster sugar
Vanilla essence
Strawberries
Jam of choice
Icing sugar to sprinkle (optional)
Instructions
1. Grease & line 2 x (8 inch) baking tins
2. Preheat the oven to 180° or Gas mark 4
3. Cream together the sugar and butter until it is light and fluffy
4. Add the eggs and half of the flour. Mix together and add the vanilla essence. Continue to mix and add the rest of the flour
5. Divide the mix between the 2 baking trays
6. Bake for around 20-25 mins (until firm)
7. Add the caster sugar and vanilla essence to the cream and mix until it is whipped
8. Put the whipped cream in the fridge
9. Once the cakes are ready, remove from tins and allow to cool
10. Spread jam and whipped cream on one cake and layer the other one on top
11. Decorate with more whipped cream, strawberries & icing sugar
