Soft Potato Bread Buns
🥔 Ingredients (Makes 8-10 buns)
• 1 cup mashed potatoes (plain, no butter or milk)
• ¾ cup warm milk (110°F)
• 2¼ tsp (1 packet) active dry yeast
• 4 tbsp sugar
• 3 tbsp unsalted butter, softened
• 1 large egg + Yolk
• 1¾ tsp salt
• 3½ to 4 cups all-purpose flour (start with 3½ and add more if needed)
• Optional: egg wash (1 egg beaten with 1 tbsp milk)
🥣 Instructions
1. Activate Yeast
In a large bowl, combine warm milk, sugar, and yeast. Let sit for 5–10 minutes until foamy.
Follow these next steps if not using a stand mixer (Follow video directions if using a stand mixer)
2. Mix Wet Ingredients
Add mashed potatoes, butter, egg, and salt to the yeast mixture. Mix until well combined.
3. Add Flour & Knead
Gradually add flour (start with 3½ cups), mixing until a soft dough forms. Knead for 8–10 minutes until smooth and slightly tacky. Add more flour if dough is too sticky. (If using the stand mixer, knead on medium until elastic, about 15-20 mins)
4. First Rise
Place dough in a lightly oiled bowl, cover with a towel or plastic wrap, and let rise in a warm spot for 1–1½ hours, or until doubled.
5. Shape Buns
Punch down dough and divide into 8–10 equal pieces. Shape into smooth balls and place on a parchment-lined baking sheet, spaced a bit apart.
6. Second Rise
Cover and let rise again for 30–45 minutes, until puffy.
7. Bake
Preheat oven to 375°F (190°C). Brush buns with egg wash. Bake for 15–18 minutes, or until golden brown and cooked through.
8. Cool
Cool on a wire rack. Store in an airtight container once completely cooled.
