How to make Sourdough 100% Rye bread 'Tourte'
Recipe:
First dough
Rye flour 100%
Sourdough 100%
Water 100%
Second dough:
Rye flour 100%
First dough 120%
Salt 2%
Water 60%
Frist fermentation: 4 hour at 86℉(30℃), ph level of the first dough is just above 4
Second fermentation: Cold 48℉(9°C) for 24 hours
Resting time: 20minutes
Bake: preheat the oven to 446℉(230℃), cover and bake for 30 minutes, then uncover and bake for 30 minutes
