INGREDIENTS
1. Daikon radish or any variety of radish
2. 2 tsp Roughly ground coriander
3. 2 tsp apple cider vinegar (optional)
3. 2 tspWhole fennel seeds
4. 2 cups of Water
5. 1 tablespoon of sea salt
INSTRUCTIONS
1. Peel and rinse radish to get rid of dirt
2. Cut radish into thin slices ensuring the slices are similar in sizes
3. Prepare the brine by adding sea salt with water.
4. Add ground coriander and fennel seeds to jar and transfer the radishes into jar. Push the radish slices down so that the jar is tightly packed
5. Add apple cider vinegar and brine until all radish are fully submerged in water
6. Add weights to further keep radish slices submerged.
7. Seal the jar tightly and leave to ferment for 2 weeks
8. Once jar is opened, transfer to refrigerator
***fermented radish can last for up to 6 months if stored in a cool dark place
