Oatmeal sourdough shokupan ~ healthy food recipe 燕麥酸種吐司 ~ 最重要自己做無添加 ~
酸種餵養比例 sourdough starter feeding ratio:1:1:1
酸種 starter 80g: 高筋麵粉 bread flour 80克:水 water 80克
材料 Ingredients for 2 loaf
酸種 Sourdough Starter 240g
高筋麵粉 Bread Flour 400g
全麥麵粉 Whole wheat flour 100g
燕麥 Oatmeal 60g
亞麻籽粉 Flaxseed 20g (optional)
羅漢果糖 Erythritol / monk fruit extract 60g
海鹽 Salt 1 tsp
有機全蛋 Organic Egg 2 pcs
有機牛奶 Organic Milk 200g + hold back 10g
軟化牛油 Butter 50g
吐司麵包面 :egg wash
全蛋 egg 1 pc + 水 water 1 tbsp
燕麥 oatmeal 20g
Knead dough 12 mins in medium high
Rest for 20mins
Add butter and knead around 6 mins
1st proof at 32c until double
2nd proof at 35c until 90% tall to the mold
預熱焗爐180c度焗 35 分鐘

Preheated oven 180c and bake for 35 mins
