Marinade:
2 lb sushi grade tuna loin
Soy sauce 6 tbsp
Teriyaki sauce 4 tbsp
Ginger grated 1 1/2 tbsp
Garlic 3 cloves minced
Sesame oil 1/2 tbsp
Sauce:
Lime juice 1 ea
Rice vinegar 4 tbsp
Mirin 2 oz
Fish sauce 2 tbsp
Gochujang 1 tbsp
Soy bean paste 1 tsp
Curry powder 1 1/2 tsp (optional)
1) Clean the blood from your tuna.
2) Start making your marinade, by mixing all the ingredients.
3) Using a plastic bag for sealing, add tuna, and marinade together.
4) Seal the bag and refrigerate for 3 hours.
5) Gather all your ingredients for the sauce and bring to a boil in a sauce pan or sauté and
Simmer for a couple of minutes until it tickens.
6) Reserve sauce and let cool completely before use.
7) Heat a sauté pan to a high temperature, add olive oil and sear tuna 35 seconds approximately in each side.
8) Let it rest to cool.
9) Cut the tuna slices .5 inch approximately and enjoy with the sauce. You could also add some rice or steamed veggies.
