MONGGO LOAF BREAD
Soft and fluffy bread filled with sweet red mung bean or “monggo” bean paste.
✔️Dough
1 cup lukewarm fresh milk (or evap) [240 ml]
2 tbsp sugar (for yeast proofing) [25 grams]
1 medium egg
2 tsp active dry yeast [7 grams]
1/4 cup sugar [50 grams]
3 cups bread flour [384 grams]
*use 2 & 1/2 cups only if all purpose flour
1/2 tsp salt
2 tbsp butter (or margarine/oil/lard) [30 grams]
extra veg. oil for kneading
✔️Filling
1 cup red monggo beans (or green monggo) [200 grams]
3/4 cup white or brown sugar [150 grams]
water
🍞My loaf pan size: 19x11x7cm (2 loaves were made)
⏳Proofing time: 1 hour + 30 mins.
🎛Baking time: 35-45 mins. or until brown @ 180C (baking time /temp varies with oven specs, I’m using conventional oven with bottom flame only)
