Jalangkote, a crispy & savory pastel typical of Makassar - South Sulawesi. My favorite since childhood and now it is my children's and husband's favorite too. Unlike pastels which have thicker skin, jalangkote skin is thinner so it is crunchier. Pastel is usually eaten with cayenne pepper or peanut sauce, while jalangkote is eaten with chili sauce which tastes sweet, sour, spicy...the perfect combination! Especially eaten on a rainy day...yummy!
Here's the recipe for jalangkote...
Jalangkote skin :
500 gr all purpose flour
50 gr margarine
1 tsp salt
30 ml cooking oil
230-240 ml warm water
Enough cooking oil for frying
Jalangkote Filling Ingredients :
250 gr carrots cut into small cubes
350 gr potatoes cut into small cubes
5 cloves of garlic, finely chopped
6 shallots, finely chopped
150 gr vermicelli (soak in warm water)
1 tsp salt
½ tsp ground pepper
2 - 3 celery stalks
3 - 4 boiled eggs
Enough water
Chicken stock or mushroom stock (for vegetarians) according to taste
Chili sauce :
5 cayenne peppers
7 curly chilies
2 red chilies
2 cloves of garlic
300 ml water
1 tbsp bottled chili sauce
Sugar, salt and vinegar to taste
