PUNJAB KI KARAHI
Ingredients
Chicken 1 kg 16 pcs (wash and dry)
Oil for deep frying
Other Ingredients
Oil ¾ cup
Ginger garlic paste 2 tbsp
Water 1 cup
Tomatoes, cut from center into halves 4
Crushed red pepper 1 ½ tsp heaped
Salt 1 tsp heaped
Crushed black pepper 1 tsp
Roasted and crushed coriander 1 tsp heaped
Small green chilies whole 6
Allspice 1 tsp
Chopped coriander 3 tbsp
Ginger julienne 2 tbsp
Green chilies 2 chopped
METHOD
In a pan, add ¾ cup oil, add 2 tbsp ginger garlic paste and fried chicken, add 4 tomatoes, cut from center into halves, cover for 10 mins, open lid, remove skin from tomatoes and keep breaking tomatoes, add 1 cup water, 1 ½ tsp red pepper and all the remaining dry spices, whole green chilies, keep frying till tomatoes soft completely. Lastly add allspice, fry well, when oil comes on top, serve garnished with coriander and ginger julienne, serve with nan.

BUFFALO SHRIMPS
Ingredients
Cleaned shrimps 750 gm
Chili sauce 3 tbsp
Flour 3 tbsp
Oil for deep frying
Ingredients for Buffalo Sauce
Butter ¼ cup
Hot sauce ¼ cup
Chili powder 1 tsp
Garlic powder 1 tsp
Sugar 1 tbsp
METHOD FOR SAUCE
Mix together and serve immediately.
METHOD FOR SHRIMPS
Marinate shrimps with 3 tbsp chili sauce, 3 tbsp flour, keep for 10 mins, make into balls, deep fry till crisp and golden, remove in a strainer, keep for 5 mins and refry for another 3 mins till crisp, remove and toss in prepared buffalo sauce.

CHOCOLATE MOUSSE CUPS
Ingredients
Cream 500 gm
Dark chocolate, grated 500 gm
Egg yolks 5
Gelatin 1 ½ tbsp
Whipped cream 500 gm
METHOD
Scalp cream, remove, add grated chocolate, leave for a while, then mix till dissolved, beat yolks till creamy and thick. Melt gelatin and add to the above ganache, also add in yolk mixture, fold in the whipped cream, mix and put it in shot glasses or bowls, decorate with cream and chocolate mixture.
