Good morning dear friends.
It's summer in Bengaluru; time for vibrant flowers and a variety of luscious tropical fruits. Today let's make an easy, delicious, no-cook, no-bake, tropical trifle. These dessert cups are made of a coconut sponge cake base, soaked with pineapple juice and white rum with coconut liqueur (optional), topped with a creamy coconut whip and finally has a layer of sweet and fruity tropical fruits on the top. Garnish with cashew nuts, toasted coconut flakes, fresh mint leaves and enjoy! If cutting fresh fruits is a hassle, use thawed frozen fruits instead. In case you don't like mangoes and pineapple; use passion fruit, kiwi, lychee or anything of your choice. This perfect spring-summer dessert tastes best when it's enjoyed immediately after it's made. So easy, anyone can make it!

▼ Ingredients:
For sponge Base:
1. Coconut sponge cake - 200 grams (Cubed) (Use eggless cake for vegan version)
2. Pineapple juice - 1 cup (To drizzle over the cake)
3. White rum with coconut liqueur - To drizzle over the cake (optional)
For Coconut Whipped Cream:
1. Coconut cream - 300 ml. - 350 ml. (Refrigerated overnight)
2. Powdered sugar - 2 to 3 tbsp.
3. Vanilla extract - 1 tsp. (5 ml.)
4. White rum with coconut liqueur - 1 to 2 tbsp. (optional)
For Fruit Topping:
1. Pineapple pieces - ½ cup (120 g) (Or frozen chunks)
2. Mango pieces - ½ cup (120 g) (Or frozen chunks)
Or any other tropical fruits of your choice (passion fruit, kiwi)
To Garnish:
1. Cashew nuts - Few
2. Toasted coconut flakes - Handful
3. Fresh mint leaves
Tips for whipped coconut cream:
1. Coconut cream is the thick creamy part scooped out from the top of full-fat coconut milk (of at least 18% fat) refrigerated overnight. You may require more than one can. The amount of coconut fat separation can vary from brand to brand. If there isn’t much coconut fat in the brand you're using, consider trying a different brand. For me 'Real Thai' coconut cream worked well.
2. Ensure that only the thicker coconut fat from the top is used from the can. Avoid adding any liquid from the can as this thins out the whip and prevents it from staying thick.
