Albert Bichot is a large negociant & wine producer in Burgundy. This means they have their own vineyards (about 100 hectares) and also buy grapes from other grape growers. Bichot was established in 1831 by Bernard Bichot, who named the business after his son, Albert Bichot.
Domaine de Pavillon is one of Bichot's labels/estates. The grapes used to produce this wine come from a 4 acres vineyard in the Grand Cru area of Les Languettes, on the south/southeast facing slope of the hill of Corton. The site was formerly the property of the Abbesses of the Lieu-Dieu abbey and is nicknamed "Vigne Dieu" (God's Vines) by historians and the older generation of growers in Aloxe-Corton. The soil is brown limestone soil overlying Argovian marls. The average age of the wines is 35 years.
The grapes are handpicked and then fermented in oak barrels (30 to 35% new barrels). They are then aged in oak barrels for 14 to 16 months. Around 500 cases of the wine was produced.
