Vaalachi Rassa Bhaji - Vegetarian Recipe
Val, also known as butter beans and some call it field beans, is a very staple pulse in Maharashtra state and Gujarat.
This is rich in proteins. Best paired with rotis, phulkas. This is a festive dish, usually made on special occasions and cooked like a meat dish.
I soak the seeds overnight and keep them for sprouting and then peel the skin. It’s a lot of effort, but worth it.

List of Ingredients
250 gms val seeds/ butter beans
1/2 tsp turmeric powder
1 tsp coriander seeds powder
1 tsp chilli powder
2 onions
2 tomatoes
Oil as required
Salt as required
1 tsp mustard seeds
1 tsp cumin seeds
3/4 asofetedia/ hing
3 tsp ginger garlic green chilly and coriander leaves paste
Chopped coriander leaves
