It has been 2 weeks since we started the hard apple cider. We used 3 different yeasts, Lalvin EC-1118, Lalvin 71B and Lalvin D47. So far the EC-1118 and 71B have residual sweetness, but the D47 went dry. We racked into fresh carboys and will let sit for another 1 to 2 weeks. Stay tuned for the next episode.
