SAUSAGE RECIPES:
DIJON (PICTURED):
4 lbs minced meat (20% pork fat and 80% rabbit meat)
1.5 tsp celery seed
3 small onions (diced and caramelized)
1/2 cup dijon mustard
2 tsp tarragon
1/4 cup heavy cream
SPICY ITALIAN:
5 lbs minced meat (20% pork fat and 80% rabbit meat)
1 TBSP salt (or to taste)
1 TBSP sugar
1 TBSP black pepper
2 tsp ground coriander
2 TBSP paprika
1 TBSP dried oregano
1 TBSP minced garlic
1 TBSP fennel seeds
1/4 cup red wine
1/2 cup water
1 TBSP cayenne pepper (to taste for level of spicy)
