INGREDIENTS
Rice Noodles: 14 ounces (397 grams)
Avocado Oil: 2 tablespoons (30 ml)
Yellow Onions (medium, split in half): 2 onions
Ginger (roughly sliced): 1 small hand (about 50 grams)
Chicken Drumsticks: 6 to 8 drumsticks (approximately 900 grams to 1200 grams)
Cilantro (small bunch): 1 bunch (about 40 grams)
Star Anise Pods: 3 pods
3 cardamom pods (lightly smashed)
Coriander Seeds: 1 tablespoon (6 grams)
Cinnamon Stick: 1 stick
Cloves: 5 cloves
Fish Sauce: 1/4 cup (60 ml)
Maple Syrup: 1 tablespoon (15 ml)
Water: 8 cups (1.9 liters)
For the Toppings
Onions (thinly sliced): As needed
Scallions: 1/2 cup (50 grams)
Mixed Herbs (cilantro, basil, mint): 2 cups (32 grams)
Bean Sprouts: 2 cups, if desired
Thai Chiles (thinly sliced): As needed
Lime Wedges: 2 limes
Paleo-friendly alternatives to Hoisin sauce and Sriracha: As desired
INSTRUCTIONS
1. **Prepare the Broth**: Heat avocado oil in a pressure cooker over high heat. Add halved onions and ginger, cooking until well charred, about 5 minutes. Reduce heat to medium, add star anise, coriander seeds, cinnamon stick, cardamom pods, and cloves. Toast until fragrant, about 1-2 minutes.
2. **Cook the Chicken**: Add chicken drumsticks, cilantro, water, fish sauce, and maple syrup. Stir to combine. Seal the pressure cooker and cook at high pressure for 20 minutes. Release pressure as per the cooker’s instructions.
3. **Finalize the Broth**: Remove chicken, strain the broth, and discard solids. Skim the surface of the broth, adjusting seasoning with fish sauce, salt, and maple syrup as needed.
4. **Assemble the Dish**: Prepare rice noodles according to package directions. In serving bowls, place noodles, top with chicken, onions, and scallions. Pour hot broth over. Serve with toppings for guests to add as they wish.
