Hi,
this is really delicious and absolutely chocolate cake!
Cherry and chocolate... What could be tastier?
ALL INGREDIENTS:
3 eggs
300 g sugar
340 g flour
-160 ml unflavoured oil
240 ml milk
70 g cocoa
13 g baking powder
1 tbsp vanilla extract or 5 g vanilla sugar
a pinch of salt
CHERRY SAUCE
350 g sweet cherries
50 g sugar
1 tbsp lemon juice
60 ml water
1 tbsp cornstarch
GANACHE
200 g dark chocolate
200 ml heavy whipping cream
250 ml whipped cream
INSTRUCTIONS
Step 1. DOUGH.
1. Preheat the oven to 180 C (350 F).
2. In a medium bowl mix together all dry ingredients except sugar (flour, cocoa, baking powder and salt).
3. IN A LARGE BOWL mix the eggs with sugar and vanilla sugar (or extract). Add the oil and milk.
4. Mix all ingredients together.
5. Pour the cake batter into the prepared pans.
Bake for about 35-40 min (use "toothpick test")
6. Let the cake cool down.
Step 2. CHERRY SAUCE.
In the saucepan add the cherries, sugar, some water and lemon juice.
Bring to boil and cook it for about 4-5 min.
Mix the cornstarch with some water and add into the cherry. Cook it until the sauce has thickened.
Cool it.
Step 3. GANACHE.
Heat the heavy whipping cream and add the chocolate. Mix it gently and let it cool at room temperature, then refrigerate for 10-20 min.
Step 4. CREAM
Mix together ganache and whipped cream.
Step 5. THE CAKE
Make the cake!
Refrigerate the cake for 2-4 hours.
