Raspberry Buttermilk Cake - a very tasty cake with a generous amount of fresh raspberries, perfect for the afternoon tea! #raspberrybuttermilkcake #raspberrybuttermilkcakerecipe #raspberrycake
RASPBERRY AND BUTTERMILK CAKE RECIPE
Ingredients:
150 g unsalted butter
150 g caster sugar
3 eggs
1 tbsp vanilla extract
180 ml buttermilk
200 g plain flour
1 1/2 tsp baking powder
250 g fresh raspberries
1 tbsp cornstarch
1 tbsp icing sugar (for dusting)
Method:
1. Pre-heat oven to 160 degrees Celsius convection or 180 degrees Celsius conventional setting
2. In a large mixing bowl, cream butter and sugar.
3. Add eggs, one at a time.
4. Add vanilla extract and half of the buttermilk. Mix well.
5. Sift in flour and baking powder. Fold gently. Half way, add the rest of the buttermilk. Fold until well combined. Set aside.
6. In a smaller bowl, coat fresh raspberries with cornstarch.
7. Add coated raspberries into the batter, fold gently until combined.
8. Pour into a 24cm lined round pan.
9. Bake for 40 minutes 160 degrees Celsius convection or 180 degrees Celsius conventional oven.
10. Let cake cool down before removing from the pan.
11. Transfer on to a plate, then dust top with icing sugar.
12. Slice and serve. Enjoy!
