Detailed recipe for Whole wheat flour & jaggery :-
Ingredients -
1. Fresh/canned orange juice - 1 cup
2. Tutti frutti - 1/4 cup
3. Black raisins or dried cranberry - 1/4 cup
4. Chopped almonds & walnuts - 1/4 cup
5. Jaggery syrup - 1 cup
6. Warm milk - 1 cup
7. Vinegar - 1 tbsp
8. Butter - 100gms
9. Vanilla essence - 1 tsp
10. Whole wheat flour - 1.5 cup
11. Cocoa powder - 1/2 cup
12. Dry ginger powder - 1 tbsp
13. Cinnamon powder - 1 tsp
14. Baking powder - 1 tsp
15. Baking soda - 1/2 tsp
16. Some nuts & cashews for toppings
Method -
1. Ideally nuts & dry fruits are soaked in orange juice for overnight (in refrigerator) to get most of the flavour. But if there is lack of time & we have to bake cake instantly then cook nuts, raisins & tutti-frutti in orange juice for 5-7 mins.
2. To soak nuts & dry fruits in the orange juice, take 1/2 cup orange juice in a pan & add all the nuts, dry fruits.
3. Now boil them for 5-6 mins on low flame. Keep stirring in between.
4. To prepare jaggery syrup - In a heavy bottom pan take jaggery around 250-300gms & add water approximately 1/2 cup.
5. On low flame let the jaggery melt & boil the syrup for 6-8 mins.
6. No need to boil for too long or else the syrup will get hard once it’s cooled down.
7. To get the syrup in a pouring consistency, boil only for 6-8 mins.
8. When the syrup is still hot sieve it to remove the dirt from jaggery & store it in refrigerator for later baking or cooking purpose.
9. To prepare butter milk - mix warm milk & vinegar. stir it & keep it aside.
10. Now in a big deep bowl, take soft butter, jaggery syrup & vanilla essence together.
11. Whisk it well to make it creamy.
12. Sieve all the dry ingredients - whole wheat flour, cocoa powder, dry ginger powder, cinnamon powder, baking powder & baking soda.
13. Now mix wet & dry ingredients together, gradually add butter milk & warm milk.
14. Now add soaked nuts & dry fruits & mix it well.
15. Whole wheat flour needs lots of moisture so add the remaining 1/2 cup orange juice & mix it.
16. Now in a greased & lined baking tin pour the batter. Level it on top & put some nuts & cashews on top of it.
17. To bake it in kadai - pre heat kadai for 10 mins on medium flame, then turn it to low & place the cake katori in it. Cover & bake for 50 mins on lowest flame.
18. To bake it in oven - keep the cake tin in a pre-heated oven & bake for 45 mins on 170 degrees.
19. Bake it till a skewer comes out clean. Once done, let it cool completely, de-mould it and enjoy 😊
