I have always had a fascination with Japanese knives. I started off with tantos and have now started learning about Japanese kitchen cutlery. I designed this kiritsuke several months ago and made a profile template for it as I wanted to make one of these at some point (although I didn't really know when I would get to it). I finally had a client for whom this knife was a good fit. It's a very simple, stock removal knife but it turned out so well that it still feels like an accomplishment. I used it to cook dinner after I finished making it and it performs wonderfully. It has a good balance (which is difficult to achieve with a chisel ground knife due to the lack of distal taper), the handle is very comfortable and the edge slices through food like butter.
I hope you enjoy watching me make it and! Thank you for watching and don't forget to like and subscribe! Also, check me out on Facebook/Instagram at Helm_W&S
